Eye of Round (Ham Eye)

The pork eye of round (ham eye) is a specially selected cut of fresh pork that offers a delicious eating experience at a great value. Although the pork ham eye is derived from the ham muscle, it should not be mistaken as a cured and smoked ham product – it is a raw, fresh cut that still needs to be cooked appropriately. Considered by many as the “poor man′s pork tenderloin,” the pork ham eye is very similar in size and shape to a pork tenderloin, but usually available at a better value! That being said, the pork ham eye should be prepared similarly to a pork tenderloin – we suggest grilling or roasting whole, then slicing into medallions. It takes to dry rubs and marinades extremely well, so we encourage you to experiment and develop your own great recipe!
