Pork Sirloin Roast

When a center-cut pork loin is removed from the middle of a full pork loin, the two remaining portions are the ribeye roast (from the front, near the shoulder) and the sirloin roast (from the back, near the ham). The pork sirloin comes from the loin, so it is still considered very lean, but it also includes seams as it begins to incorporate other muscles from nearer the ham.
