St. Louis-Style Spare Ribs
St. Louis style ribs are spareribs with the sternum bone, cartilage and rib tips removed to create a rectangular-shaped rack. These often are the best type of ribs for recipes that require browning in a frying pan because the ribs are straight and flat.
Ribs can be prepared “wet” or “dry,” depending on your preference. Ribs rubbed with a mixture of herbs and spices before cooking are called dry ribs, and are a great option for those who prefer seasoned meats to those served with sauces. Wet ribs are basted with sauces while cooking, and your choice of sauce can greatly impact the overall flavor. If you′re not sure which you′d prefer, we recommend trying both!
