Grilled Pork Tenderloin with Tzatziki Sauce

Serves 4

  • For the pork:
  • 1 to 1¼ lbs Tender Choice® pork tenderloin
  • ½ tsp kosher salt
  • ¼ tsp freshly ground black pepper
  • ¼ tsp dried oregano
  • ¼ granulated garlic
  • 1 tsp olive oil
  • For yogurt sauce:
  • 1 T extra virgin olive oil
  • 1 T red wine vinegar
  • 2 cloves garlic, minced
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • 2 cups nonfat Greek yogurt
  • 2 cucumbers, peeled, seeded and coarsely grated
  • 1 tsp chopped fresh dill
Cooking Directions:

For the sauce: Combine all ingredients except the cucumber and dill in a medium bowl. Mix with a wire whisk until thoroughly combined. Fold in the grated cucumber and chopped fresh dill. Refrigerate until needed. Combine the salt, pepper, dried oregano, and granulated garlic. Rub the pork tenderloin with olive oil and season with salt and pepper mixture. Grill the pork over a medium-hot fire for 10-12 minutes, turning frequently, until an internal temperature of 145° F is reached on a meat thermometer. Remove pork from the grill and let rest for at least 10 minutes before slicing. Serve with tzatziki sauce, green salad with grape tomatoes and red onions, and bulgur pilaf.
