The Latin Legend
Perfect as a dip, this tasty pork dish has a hint of south-of-the-border flavor.
Serves 4 to 8
- 1 lb Tender Choice® pork sirloin roast, cut into 1x1 inch cubes
- 1 T vegetable or bacon fat
- Kosher salt and pepper
- 1 onion, diced large
- 3 cloves garlic, chopped
- 3 large fresh jalapeños, chopped
- 24 oz green salsa
- ½ cup chopped cilantro
In a large pan, heat oil over high heat until almost smoking. Season pork with salt and pepper, then brown in oil. Set pork aside. In the same pan, brown the onions, then add garlic and jalapeños; cook for one minute. Return the pork and juices to the pan, add green salsa and enough water to cover meat. Bring to a boil, then reduce heat to a simmer and cover until pork is tender and an internal temperature of 145° F is reached on a meat thermometer, about 1 hour. Serve with corn chips.
