Pork Filet with Wild Rice Confetti
Teriyaki flavor complete with a flavorful rice accompaniment.
- 1 Tender Choice® teriyaki-style loin filet
- ½ tsp olive oil
- 1 tsp thinly sliced carrots
- 2 cloves garlic, minced
- 3½ cups vegetable broth
- 1 pkg store-bought wild rice blend
- ½ cup washed and sliced scallions
Preheat oven to 350° F. Place the loin filet on a baking sheet and place into the preheated oven. Cook to an internal temperature 145° F using a meat thermometer, then allow to rest for 3 minutes.
To prepare rice, heat oil in a large nonstick skillet over medium heat. Add carrots and garlic and cook until tender. Stir in broth, wild rice blend and scallions. Heat to a boil, reduce heat and cover. Cook over low heat for 25 minutes until rice is cooked.
To serve, slice teriyaki loin filets into ¼ inch slices and serve with rice blend. Garnish or serve with shiitake mushrooms.
