Pork Loin with Creamy Tomatillo Sauce

Serves 10

  • For the pork:
  • 4 to 4½ lb Tender Choice® center-cut boneless pork loin roast
  • 3 T carne asada or taco seasoning
  • For sauce:
  • 1 jar (16 oz) tomatillo salsa (Frontera® or Herdez® preferred)
  • 4-6 oz nonfat Greek yogurt
  • ¼ cup chopped cilantro
Cooking Directions:

For the pork: Rub the pork all over with carne asada or taco seasoning. Let roast rest at room temperature for 30 minutes. Heat oven to 450° F. Place pork in oven and roast for 15 minutes. Turn heat down to 300° F and continue to cook for 40-50 minutes, or until internal temperature of 145° F is reached on a meat thermometer. Let pork rest for at least 15 minutes before slicing. Serve with Creamy Tomatillo Sauce, brown rice pilaf and spicy black beans

For the sauce: Combine all ingredients and stir well.
