Seasoned Pork Tenderloin Salad
Simple ingredients combine to create a fresh, yet savory salad.
- One Tender Choice® pork tenderloin, approximately 1 to 1 ¼ lbs
- ½ tsp kosher salt
- ¼ tsp freshly ground black pepper
- ¼ tsp dried thyme
- 1 T olive oil
Preheat oven to 350° F. Season pork tenderloin with salt, pepper and dried thyme. Heat olive oil in a medium oven safe sauté pan. Sear the pork on all sides. Place the pan in the oven and roast the pork for 15-20 minutes, or until an internal temperature of 145° F is reached on a meat thermometer. Slice tenderloin into medallions, and serve over mixed greens tossed with sliced apples, your favorite dressing and bulgur wheat, if desired.
