Seasoned Pork Tenderloin with Mint Rice
Colorful salad is served with fresh mint rice and a classic tenderloin.
Serves 2 to 3
- 1 Tender Choice® Teriyaki-style pork tenderloin
- 1 pkg cherry tomatoes
- 1 bag pre-mixed baby greens salad
- 1 bag baby carrots
- 1 yellow bell pepper
- 1 box instant white rice
- 1 small bottle sesame oil
- ¼ cup fresh chopped mint leaves
- Salt and pepper to taste
- Sesame seeds to garnish (optional)
For salad: Halve cherry tomatoes and add to large bowl with mixed greens. Slice the carrots and yellow pepper into thin strips and add to salad. Toss salad and set aside to chill.
For rice: Prepare according to directions on box. When rice recipe calls for oil, substitute with the sesame oil. When rice is complete, add chopped mint leaves and season with salt and pepper to taste.
For pork: Preheat oven to 350° F. Place the tenderloin on a baking sheet into the preheated oven. Cook to an internal temperature 145° F using a meat thermometer, and allow to rest for 3 minutes.
To serve, slice pork tenderloin into ¼ inch slices and garnish with sesame seeds, if desired. Serve salad with your favorite dressing. Enjoy!
