Smokehouse BBQ Pork Loin Filet
Delicious pork loin served up with sweet yams, grapes and veggies.
- 1 Tender Choice® Smokehouse BBQ loin filet
- 2 large yams, washed, peeled and cut into 1-inch pieces
- 2 T of olive oil
- 2 sprigs fresh chopped thyme (leaves only)
- 1 pinch each of salt and pepper
- 1 bunch purple grapes, halved
- 2 cloves garlic, chopped
- 4 oz sweet corn kernels
- 3 oz cut okra
- 1 T shaved carrot sticks
Preheat oven to 350° F. Place the loin filet on a baking sheet into the preheated oven. Cook the loin filet cook to an internal temperature of 145° F using a meat thermometer, and allow to rest for 3 minutes.
For yams: Preheat oven to 350° F. Place yams into a bowl and drizzle with 1 tablespoon of olive oil. Season with thyme, salt and pepper and toss yams slightly. Place yams on baking sheet and bake for approximately 30 minutes, or until yams are fork-tender. Pull out yams, add grapes to the baking sheet, and bake for an additional 8 minutes.
For corn: Preheat a sauté pan to medium heat. Add 1 tablespoon of olive oil to hot pan, then add garlic, corn, okra and carrots slowly. Sauté until vegetables are slightly brown and tender.
To serve, slice pork into ¼ inch slices and add both side dishes.
